1 tablespoon olive oil
1/4 cup (1/2 stick) butter
2 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
6 garlic cloves, chopped
2 scallions, thinly sliced
1 tablespoon chopped fresh parsley
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon black pepper
- In a large skillet, heat the oil and melt the butter over medium heat. Add the chicken and sauté for 3 to 4 minutes, or until browned on all sides.
- Add the remaining ingredients and sauté for 2 to 3 minutes, or until the garlic is golden.
