- Prepare the pasta according to the package directions; drain, place in a large bowl, and set aside. Cover to keep warm.
- Meanwhile, coat a large nonstick skillet with nonstick cooking spray.
- Add the mushrooms, bell pepper, and artichokes and sauté over medium-high heat for 6 to 8 minutes, or until tender and no liquid remains. Stir in the fresh tomato, the sauce, cumin, salt, and black pepper and continue cooking until thoroughly heated.
- Add the vegetable mixture to the pasta and toss to mix. Sprinkle with Parmesan cheese and serve immediately.
