School hasn't been back in session for that long, yet the kids are already trading their lunches because they're bored with what we've been packing for them!

You know, just like us, kids eat with their eyes -- if their food looks good, chances are they'll try it. Here are a few ideas to breathe new life into their lunch boxes:

  • Make a kid-pleasing triple-decker with colorful layers of pepperoni slices and American cheese on a corn tortilla. Cut it into wedges and send along a small container of pizza sauce for dipping. They'll go wild for 'em!

  • Spruce up an old standby by rolling up a banana in a whole wheat tortilla that's been spread with peanut butter then cut into half-inch slices to form coins.

  • Want to "sandwich in" some nutrition that they won't toss or give away? Grate veggies onto sandwiches (it looks like confetti...all kids love that)! And it works well with creamy spreads too -- try baby carrots and celery sticks with yummy flavors of yogurt they can squeeze on.

  • Send cups of applesauce or pudding as dips for low-fat graham crackers.

  • If we've got kids with braces who we can treat to a bit of "forbidden crunch" once in a while, try sprinkling a bit of crushed-up potato or tortilla chips on their sandwich fillings -- the salty crunch turns ho-hum into wow! They love it!
